Sunrise Casserole

Sunrise Casserole

1-2  pounds lean ground turkey sausage
9 eggs or equal amount of egg substitute
3 cups skim milk
1 tsp ground mustard
1/2 tsp pepper
1 - 20 ounce refrigerated shredded hash browns (the lowest fat and sodium option you can find)
2 cups shredded cheddar cheese 2%
1 diced red bell pepper
1/3 cup diced green onion
handful of chopped spinach

Optional -2 cups salsa

brown ground turkey sausage and drain, combine all ingredients in a bowl except the salsa, pour into a sprayed 13 x 9 inch baking dish

Refrigerate overnight

Bake at 350 for 60 -65 minutes, serve with salsa
