Paleo Bacon Cheeseburger Casserole



Picture is with potato tater tots, but will look just the same with sweet potato tater tots just more color.


1 lb.  lean ground turkey
1 onion, chopped
1/3 cup organic ketchup for the original recipe, or trade it out for 1/3 cup organic tomato sauce no salt added, with 1 tbsp. raw honey melted, 1/2 tsp onion powder and 2 tsp(s) distilled vinegar
2 Tbsp. yellow mustard
1 cup Vegan shredded cheddar, I like Trader Joes or Daiya
8 slices bacon or turkey bacon reduced sodium, cooked, crumbled
4 cups (1/2 of 32-oz. pkg.) frozen sweet potato tater tots,( most stores are starting to carry these now or you could make your own).  Sometimes they are in the organic section and sometimes they are in the frozen tater tot, fry section.

Directions

Brown turkey with onions in skillet; drain. Stir in ketchup and mustard; spoon into 9-inch square baking dish sprayed with greased with coconut oil or sunflower spray.
Top with remaining ingredients.
Bake 30 to 35 min. or until casserole is heated through and sweet potato nuggets are golden brown

Paleo Tuna Salad with Avocado

1 large 12 oz can Albacore Tuna Drained well
1 avocado peeled, seed removed and mashed
1 tsp pepper
1 thick slice- 1/4 red onion diced
2 stalks celery chopped
1 carrot shredded
2 hard boiled eggs diced
1 small tomato diced, shell only, remove the seeds and pulp (if not it will create too much liquid as it sits in the fridge)  If you are going to eat all of it right away, you can use the whole tomato, or just use grape tomatoes and do not cut them.

Optional Not Paleo but still qualifies as Clean Eating - use 1/2 avocado and 3/4 cup cooked peas (cook until very soft) drained well and placed in the food processor to give even the skin the same texture of the mashed avocado.  This will reduce fat

Optional- 1 tbsp yellow mustard

Serve alone, on raw veggies, or on one half of a bell pepper like a sandwich or for the kids who eat part Paleo and part just GF, I serve it to them with Chipins or popcorn chips.

The kids like it in the broiler for a couple of minutes with vegan shredded cheese on top.

Also good on one half of a bell pepper, with vegan cheese on top, and placed in the broiler for a few minutes

Paleo Basil Crusted Baked Salmon


  • nonstick cooking spray
  • 1/2 cup dry white wine
  • 1 tbsp teaspoons dried oregano
  • 2 cloves garlic, minced
  • freshly ground black pepper
  • 1 lemon, juice of, divided 
  •  1 Tbsp coconut oil melted, olive oil or grape seed oil
  • 1 tomato, thinly sliced
  • 1/2 medium onion, thinly sliced
  • 2 tablespoons chopped fresh parsley leaves (or 1 tsp dried)
  • 1 tsp dried basil, I prefer 2 tsp
  • 1/4 cup almond meal

      Directions:


      Pre-heat oven to 450



      1. Spray a shallow baking pan with nonstick coating.
      2. Add wine.
      3. Place fish in pan, and sprinkle with oregano, garlic and pepper.
      4. Sprinkle with juice of 1/2 lemon.
      5. Top evenly with tomato and onion slices.
      6. Drizzle with remaining lemon juice.
      7. Mix almond meal with parsley, basil and olive oil, and sprinkle over veggie topped salmon fillets.
      8. Bake at 450 for about 8-10 minutes or until fish flakes easily.  Time will depend on if you use individual fillets or one large fillet as shown.
