Crock Pot Reduced Fat Cheesy Chicken



  • 4-6 boneless chicken breasts
  • 1 can reduced cheddar cheese soup, Healthy Request
  • 1 can cream of celery soup, Healthy Request or Reduced Fat
  • 1 small can fat free evaporated milk
  • 1/2 cup diced green onions
  • pepper to taste

  • If you are using shredded cheddar instead of cheese soup, use 2 cream of celery healthy request or reduced fat soups



Directions:
Cook chicken on high heat about 3-4 hours in slow cooker, after about 3-4 hours remove chicken, drain liquid and shred chicken, spray crock pot with cooking spray, place shredded chicken back in the slow cooker, add green onions, soups, cheese and pepper, continue to cook on high for about 1-2 or on low for 2-3 hours until the sauce has a light bubble.

Optional- Serve over steamed broccoli or cauliflower, or with spinach or peas, or over brown rice, baked potato or whole wheat wide noodles.
