Chicken and Artichoke Soup With an Italian Twist

1 Tbsp extra virgin olive oil
1 cup chopped onion
1 tsp dried oregano
4 cups reduced sodium vegetable or chicken broth
1 can 14 (oz) no salt added diced tomatoes
2 cups water
1/4 instant brown rice ( more if desired)
2 chicken breast cooked and chopped
1 package (9 oz) frozen artichoke hearts, thawed and chopped
1/4 cup chopped fresh parsley
grated Parmesan cheese

Directions

1. Heat oil in a pot over medium heat and swirl to coat, add onion and oregano and cook and stir for about 3 minutes
2. Stir in broth, 2 cups water, tomatoes with juice and rice and bring to a light boil. reduce heat and simmer for about 10 minutes
3. Add chicken and artichokes, cook for about 3 minutes or until heated through and rice is tender
4. Add parsley and pepper to taste
5. Serve in 4 bowls and sprinkle with cheese
