Chicken Sausage in Spicy Rice

Chicken Sausage in Spicy Rice

Very Low Fat

4 chicken sausages (brats) sliced in circles (we buy Artisan)
2 cups brown rice
1 3/4 cups water
1 tsp crushed red pepper flakes ( you can use 2 tsp, but if serving others, I would only use 1 tsp and add more to your own bowl)
1 tsp pepper
1 tsp minced garlic
small hand full of cherry tomatoes rinsed and chopped in half
1 green or red bell pepper chopped
1 zucchini washed and diced

Optional- top with a little hot sauce and Parmesan cheese

spray a skillet and cook bell pepper and zucchini over medium heat for about 3-4 minutes, add all other ingredients covered over medium high heat until rice is tender and liquid is absorbed.
