Thai Shrimp Pasta

Thai Shrimp Pasta

1 tbsp minced wet garlic
2 tbsp chunky peanut butter
1 tbsp honey
2 tsp roasted sesame oil
1 tbsp reduced sodium soy sauce
1 tbsp sriracha chili sauce
1 tbsp fish sauce
2 tbsp peanut oil
1 lb peeled large raw shrimp
2 red bell peppers thinly sliced
1 cup sliced shiitake mushrooms
3 green onions chopped
6 oz whole wheat spaghetti or Linguine noodles, cooked and drained
2 limes quartered

  1. In a blender puree first 7 ingredients
  2. In a large skillet heat over medium heat until hot, add 1 tbsp oil and swirl to coat, add shrimp and cook until pink, about 2-3 minutes, transfer to a plate and cover to keep warm
  3. Add 1 tbsp of oil to the skillet and swirl to coat, add peppers, mushrooms and cook for about 2-3 minutes, add shrimp, sauce, pasta and green onions, cook until heated through about 1-2 minutes
  4. Serve with lime wedges
