Minestrone Soup
About 250 Calories
- 3 1/2 cups reduced sodium chicken broth
- 2 cups water
- 1 cup chopped onion
- 1 cup sliced carrots
- 1 teaspoon minced garlic
- 1 can (16 ounces) crushed tomatoes
- 1 medium (6 ounces) zucchini, quartered lengthwise, then sliced 1/4-inch thick
- 1 bag (9 ounces) frozen cut green beans
- 1/4 teaspoon pepper
- 1 1/2 cups small pasta shells
- 1 can (16 ounces) red kidney beans, rinsed and drained
Directions
- Bring broth, water, onion, carrots and garlic to a boil in a large pot. Reduce heat, cover and simmer 3 minutes or until carrots are crisp-tender.
- Add crushed tomatoes, zucchini, green beans and pepper. Return to a boil, add pasta, cover and simmer 10 minutes, stirring occasionally, until pasta is tender. Stir in beans
