Turkey Loaf

Turkey Loaf

2 Pounds Ground Lean Turkey
1 cup oats
1 can tomato sauce
1 tbsp each oregano, basil, minced garlic and parsley
1 chopped onion
1 chopped bell pepper (any color)
1 Cup Frozen Corn
1 can drained diced tomatoes

Mix all together and form a loaf, place in sprayed loaf pan and cook on 400 for 40-60 minutes, depending on thickness of loaf.  Check the middle to ensure it is cooked through, add additional sauce to the top and place in over until sauce is heated

HINT- I like using the disposable metal loaf pans, so I can take out of the oven after it starts to set and is close to being done,  I poke a hole in the bottom of the pan and drain the excess liquid and grease.  Place the loaf pan on a cookie sheet and pour sauce over the top and return to the oven.
