- 1 lb. all-purpose potatoes, peeled and diced
- 1/2 cup plain Greek yogurt
- 1 Tbsp. skim milk
- pepper to taste
- 1/4 to 1/2 cup 2% shredded cheddar cheese
- 4 pieces lower sodium turkey bacon cook crisp and crumbled
- 2 green onion diced
- Cover potatoes with water in 2-quart pot. Bring to a boil over high heat. Reduce heat to low and simmer 10 minutes or until potatoes are tender; drain. Return potatoes to pot; mash.
- Stir in yogurt, milk, pepper, onions, cheese and bacon.
