- 1/2 cup plain Greek yogurt
- 1-1/2 Tbsp. Cajun spice
- 1/2 cup shredded Mexican blend cheese, divided, 2% if you can find it
- 2 Tbsp. finely chopped parsley
- 4 boneless, skinless chicken breast halves
- 1/4 cup whole wheat bread crumbs or plain
- Combine yogurt, cajun spice, 1/4 cup of the cheese and parsley. Spread on chicken, then sprinkle with crumbs. Bake at 425°, 20 minutes or until thoroughly cooked. Sprinkle with remaining cheese; heat 1-2 minutes until cheese is melted.
