Strawberry, Spinach, Chicken Salad
Grill or Bake 2-3 Chicken Breasts
Mix 1 bag rinsed and dried Spinach leaves, 1 pint rinsed and halved Strawberries, a few rings of red onion chopped and ½ cup slivered almonds
Optional Craisins are great too
Dressing
½ cup Extra Virgin Olive Oil
2 tbsp Splenda
2 tbsp Apple Cider Vinegar
1 tbsp chopped onion
1 tsp Poppy Seeds
1 tsp Sesame Seeds
¼ tsp Paprika
1/8 tsp Worcestershire Sauce
Place Dressing ingredients in a blender
Pour over Salad, and then top with chicken breast.
If you are serving salad as just an appetizer salad or taking to a party as a side dish, you can omit chicken
